BB chef #1- Neil Forbes

burger lovers. we are lucky. for our first chef, we’ve scored Neil Forbes, executive chef at that little french fancy in the New Town, Cafe St Honore. Not only that Neil is Scottish Chef of the Year. Despite his very posh career (working in too many michelin starred restaurants to name) Neil is not above a bit a burger fun. In fact, he couldn’t wait to get in on the action. Because Neil loves burgers AND burghers. Let’s hear a bit from Neil now:
As an established chef with his own restaurant, why do you want to get involved in guerilla dining/pop-ups?
People like eating together – it’s in our nature to want to share that experience. It’s about more than just food, so to meet and eat somewhere different is very exciting. The fact that Burgher Burger is a bit secret appeals to me. It’s a great opportunity to cook out of my comfort zone and to create a menu I would never do at the restaurant. I’m not really known for making burgers – but I do love them. This is going to be great fun!
What's special about burgers?
Most importantly they’re very tasty, but they’re also simple, versatile, and kind of cool too.
What cuts make the best burger? Is organic important?
Well that's a question for my organic producer/butcher. But fat content, taste and quality all need to be taken into account. I do believe that organic farming is better. But just as important is the breed of cattle and the feed.
What would your ultimate burger meal consist of?
My perfect burger meal HAS to be messy. A simple cheese burger with my own bacon and crinkle-cut chips – I love them as they remind me of childhood! For pud, something chocolatey and gooey with ice-cream so I can imagine I’m in an American diner.

- Seafood cocktail
- Cheese and bacon beef burger, crinkle-cut chips, onion rings
- Gooey brownie, vanilla ice-cream
