BB chef #2 - tony singh

When you read this chef’s c.v. all you can think is, what a hard working serious man he must be to have achieved all of this. Head chef and director of Oloroso, he’s got a string of awards- Scottish chef of the year, best new restaurant to name a few. He’s had t.v appearances on programmes like the Great British Menu and Market Kitchen. He is a member of Academy of Culinary Arts and a number of other big-cheese organisations. As well as all of that, he’s involved in political campaigns around food production and food waste awareness.
I thought it would take some convincing to get Tony Singh to talk guerilla dining with me, let alone take part. As it happens, Tony Singh totally out ‘guerilla-d’ me on our first meeting. When I asked why he would do it he told me "it`s my dark side I need to let it off the leash once in while!" He was bursting with ideas about cooking his legendary bhangra burger on a disposable bbq in a car park. He wanted to get rid plates and knives and forks and use polysterene containers. “It`s the whole meal in your hands and getting stuck in that does it for me”. I'm not sure about the polysterene...
But... he’s definitely convinced me on the ‘whole meal in your hands’ aspect. The bhangra burgers has everything in it... so no chips on the side - the spiced potato is between the buns sitting on top of a lamb patty seasoned with Tony’s secret spicy recipe. He loves to use lamb as an alternative to meat because it’s got the right amount of fat in it for self basting. There’ll be a spicy sauce on the side that’ll come with a health warning... not quite a kismot killer but something to get you nice and hot under the collar
Tony’s not bothered by hi-tech kitchen equipment or having a big team of helpers. He just sees Burgher Burger as a great opportunity to do something new and have some fun. What’s more, Tony has a hilariously irreverent take on people that take food too seriously. To rephrase in a more spam filter-friendly language - food is about fun and tasting good- and that is what Burgher Burger is all about. Tony says nothing matters more than the company, the right crowd can make a glass of water fantastic.
Tony will be Burgher Burger Chef #2 and that’ll take place on Monday 5 March. We’ll be in the Leith area again, and I’ll let you know the location soon... we will, however, leave the car parks until the summer maybe.
