Burgher Burger #6 Paul Wedgwood

For Burgher Burger #6 we have multi-award winning Chef Paul Wedgwood of the multi-award winning restaurant Wedgwood taking the helm.

 

Paul Wedgwood started his career in the Lake District working in a variety of establishments from pubs and Country house hotels to award winning fine dining restaurants. In 1999 Paul opened the Georgian House Restaurant and bar in Kendal which was hugely successful despite being located in a working class market town. Six years later he opened Wedgwood the Restaurant.

 

Wedgwood the Restaurant has quickly become a key player in the Edinburgh restaurant scene and has won many accolades.

 

Paul focuses on using Scottish ingredients which are as local as possible but he is not prepared to compromise on quality. Becoming well known for using foraged leaves, herbs, fruits and mushrooms and Paul has a forager who keeps him supplied with many unusual ingredients. However, Paul can often be found foraging on the river bank or in the woods in search of the best ingredients. His ultimate burger meal reflects his love of foraged ingredients, and his fun streak is evident in his back-to-front menu: starter for dessert, dessert for starter.

 

Burgher Burger #6 will take place on Tuesday 3 July at Now Rest on Bonnington Road. The menu is:

 

Starter: West coast shellfish ice cream sundae

Main: Water buffalo and Black pudding burger, foragers pesto, crispy rings

Dessert: Goats cheese semi freddo, balsamic onion marmalade sorbet

 

As always, four bottles of Innis and Gunn Beer are included in the ticket price of £35 (incl. fees). Our meat is provided by Puddledub Buffalo.
